Halloween Weekend Recap and a Recipe!

I cannot believe that it’s already the last day of October, where has this year gone?! In my mind, the holiday season starts tomorrow and you better believe that I will be busting out the Christmas music! But back to today…I didn’t dress up for Halloween this year, but we did have a wonderfully relaxing weekend.

Oh, and Lola dressed up. As a hot dog.

Saturday, we took Lola to a dog Howl-a-ween party (that’s really what it was called, so clever…) at a place near our house called Zoom Room, which is a dog agility gym. It was actually a lot of fun, and I loved seeing all the dogs in their costumes because dogs in costumes are freaking adorable. Plus, Lola had a blast.

I’m proud to say that Lola took second place in the costume contest! Woo!! She won five sessions of open gym, and I’m excited to take her back and work on some agility skills. 
The Howl-a-ween party was pretty much the highlight of the weekend (seriously though), but did do a few other fun things this weekend as well. Saturday morning, we went and watched the Michigan game at one of our favorite breweries in Longmont, and it was another victory for our Wolverines who beat Purdue 36 to 14.

Yesterday, we drove around Rocky Mountain National Park and it was beautiful with the snow…plus we got some good pictures of our little fam that I’m planning on using for our Christmas card.

Then last night we carved our pumpkins and I’m really happy with how they came out.

Also, I have seriously been cooking a storm lately and I have a backlog of recipe photos that I need to put up. So stay tuned for some tasty eats in the near future (or whenever I actually have time to put them up!) I do have one recipe from the weekend that I thought I just had to share today and it’s for the best roasted pumpkin seeds you’ll ever have. No really, they are so good! I was just going to do something boring and put a little oil and salt on them, when I found this recipe and thought it sounded interesting. I’m so glad I did because the result was delicious. If you have pumpkin seeds, you need to give it a try.

 Cumin Roasted Pumpkin Seeds
Ingredients:
1 cup pumpkin seeds, cleaned and dried
1 tablespoon unsalted butter, melted
1 1/4 teaspoons ground cumin
1 teaspoon garlic salt
1/2 teaspoon ancho chili powder
pinch of freshly ground black pepper
 Directions:
-Preheat oven to 350ยบ and line two small baking sheets with parchment or
foil.
-In two small bowls, combine all ingredients for each batch of pumpkin
seeds.  Stir to coat completely.  Spread evenly onto the two prepared
baking sheets.
-Bake for 8-14 minutes, or until seeds are crunchy.  This will depend
largely on the size of your seeds, so check them frequently.
