Flourless PB Chocolate Chunk Cookies

The other night I had a craving for something sweet (standard), so I just typed the word “cookies” into foodgawker with plans to make the first thing that caught my eye. As soon as I saw that these Peanut Butter Chocolate Chip cookies had a description that they were flourless, I was like WHATTTT?!? Chocolate chip cookies without flour, how is this possible? Looking through the recipe and photos at Divine Baking, it stated that the cookies were also made without using butter. Double WHATTT?!?! The photos of the cookies looked delicious and totally normal despite the fact that they were lacking two major ingredients. I was intrigued and decided to give them a go, but I was skeptical of how they would actually come out. (So was Cam…when I told him I was making flourless butterless cookies he was not pleased…)

Mind blown.
These cookies are ah-maz-ing. They are the perfect blend of peanut butter and chocolate, and are super easy to whip up. I do have a few words of warning; the dough is NOT going to look like normal chocolate chip cookie dough, just know that. It will be very crumbly and you’ll have to really roll it a bit to form it into a ball. Also, do NOT put the dough in the fridge. I tried this with my second batch of these cookies because I thought it would help the consistency of the dough, and it did the opposite.
Seriously, you need to give this recipe a try because you’ll be amazed at the results. And they are practically healthy since there isn’t any butter or flour…just peanut butter, sugar, and chocolate. Ok so they’re not exactly healthy, but they are delicious.

Flourless Peanut Butter and Chocolate Chip Cookies

1 cup super chunky peanut butter (I used Smooth PB due to my aversion to nuts in baked goods)
1/2 cup (packed) brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1 cup semisweet chocolate chips (about 6 ounces) (I used chocolate chunks instead of chips and I think it totally took these cookies to the next level)
Preheat oven to 350°F. Mix first 6 ingredients in medium bowl. Mix in chocolate chips. Using moistened hands, form generous 1 tablespoon dough for each cookie into ball. Arrange on 2 ungreased baking sheets, spacing 2 inches apart.
Bake cookies until puffed, golden on bottom and still soft to touch in center, about 10 – 12 minutes. Cool on sheets 5 minutes. Transfer to racks; cool completely.
Makes 20 cookies.
