{Paleo} Sweet Potato Hash

Happy Friday everyone!
So I’ve been slacking on posting recipes lately! And it’s definitely not for a lack of cooking, as Cam and I have been eating most of our meals at home over the past few months. It’s just a lot of our dinners lately are not…how shall I say…blog-worthy. They typically consist of some type of protein (pork loin, salmon, chicken, etc) and some sort of green veggie (asparagus, brocolini, brussels sprouts, etc) that are usually roasted with some olive oil and garlic salt. Delicious? Yes. Nutritious? Yes. Interesting? Not so much.
However, I’ve been on the hunt for new Paleo-friendly recipes to add to the rotation to spice things up a bit. Earlier this week, I tried a new dish that’s definitely going to become a staple at our house–Sweet Potato Hash!
I was inspired to make give this recipe a try after seeing my friend Wendi post a picture of her version a few weeks ago on Facebook. (Hey Wendi!) I picked up a few sweet potatoes at Trader Joe’s last time we were there and thought that a dish like this would be the perfect way to use them. I ended up using this recipe that I found at Multiply Delicious and OH EM GEE it is SO good!
The hash contains sweet potatoes, apples, spinach, and chicken sausage (along with other ingredients) and I love that a) the flavors all go so well together and b) it gives you so many different nutrients in one grain-free, dairy-free dish! And the best part is it’s really easy to make, plus it’s really colorful.

Skillet Sweet Potato, Sausage, and Spinach Hash
Recipe From: Multiply Delicious
2 small to medium sweet potatoes, peeled and diced (or one large)
1 apple, peeled cored and diced
2 tablespoon coconut oil, divided
1/4 teaspoon cinnamon, optional
(definitely put in the cinnamon, it totally makes the dish!)
2 Mild Italian chicken sausages, removed from casing
(I used fully-cooked chicken apple sausage, and I opted not to remove them from the casings…I just chopped them in to small cubes!)
2 to 3 large cups of baby spinach
(I used 3 large handfuls, but I think you could definitely double the spinach as it cooks down so much)
1/3 cup sweet yellow onion, diced
salt and pepper to taste
In a large nonstick skillet heat 1 tablespoon coconut oil over medium-high heat. Once heated, add diced sweet potatoes and apples. Add a pinch or two of sea salt and cinnamon to the pan. Cook sweet potatoes and apples until cooked and softened. I prefer my sweet potatoes to be slightly browned.
While the sweet potatoes are cooking, heat a large skillet with 1 tablespoon coconut oil over medium heat. Add to skillet the chicken (or pork) sausage and onion making sure to break the sausage up in small pieces while it cooks. Once the chicken is no longer pink in color and completely cooked add spinach to the skillet. Don’t worry the spinach will wilt down when cooked. The spinach should wilt down within 1 to 2 minutes. Once spinach is cooked add the sweet potato apple mixture to pan and stir to combine all. Serve warm.

This dish is perfect for breakfast, brunch, lunch, as a dinner side dish or a late-night snack. The batch I made earlier this week made enough for Cam and I to each get two filling breakfasts out of it. Since we started eating Paleo a few months ago, breakfast is definitely the meal that’s been toughest for me. I was so used to eating cereal/milk or yogurt/granola or toast/peanut butter, so it’s been a little hard to figure out what to eat in the mornings. I eat eggs often and although I really love them, after a while they start to get a little repetitive. This hash is the perfect cure for breakfast boredom! I’m planning to make it this weekend for my parents for brunch, and I’ll feel like it’s going to become one of my go-to dishes.

    First of all that recipe looks delish! I have been reading up on Paleo and I am thinking I wanna give it a try…now to convince the hubby. πŸ™‚ Second Istagram is so much fun, I have a Droid as well and I have been slowly but surely trying to figure it out. I will have to add you!
