Kale Chips

Hey everyone!
I am back from Michigan and although I miss my family and friends, it feels really nice to be home. Even though my parents’ house is still my “home” too, when I’m there I definitely tend to get out of my normal routines. I tend to stay up way too late and eat way too much sugar…really, just eat way too much in general! So now that I’m back in Tahoe, I want to try to get back on track. I’ve got unpacking, laundry, cleaning, and other random errands that need to get done now that I’m home, and I know it will take me a few days to get caught up and back in the swing of everything.

I’m definitely feeling a little tired, bloated, and just all-around sort of sluggish today, so my plan is to really focus on my diet, exercise, and getting lots of sleep this week. Luckily, it’s much easier for me to adjust coming back to the West Coast from the East Coast with the time difference, so I’m not feeling too jet-lagged…but I still want to try to get to bed early this week. It was extremely hot and humid while I was in Michigan, so I didn’t really do much physical activity while I was there. The heat made it hard to even go for walks or do anything active outdoors, so that’s why I’m really looking forward to lots of walks with Lola this week and getting back to my gym because I tend to have less energy when I’m don’t workout.  As far as diet, I had so much delicious food while I was in Michigan (more on that later this week!), but I really overdid it on my sugar consumption. I ate an obscene amount of candy, like I’m a little disgusted just thinking about it. And it wasn’t for lack of choices at my parents’ as they had plenty of healthy food in the house (which I did eat some of that too, it’s not like I ate all bad stuff!) but I just have very little self control when there is candy and junk food in easy reach! Eating tons of crap just makes me feel really blah, and so I’m definitely feeling the negative effects on my body today. But rather than beat myself up about it, I just want to really to get back to my normal healthy diet now that I’m home. I’m going to try and detox as much as possible this week by focusing on eating lots of fresh fruit, veggies, and healthy meats/proteins, in addition to drinking lots of water.

That’s why I thought today would be the perfect time to share an oh-so-easy recipe with y’all that’s delicious and healthy…Kale Chips!

Kale is packed with nutrients, and so this recipe is an easy way to enjoy this superfood. I followed the directions I found over at Shutterbean, and they’re extremely simple.  

Wash and dry the kale, tear into bite size pieces, and place in a large bowl. Add a few glugs of olive oil and then toss until the kale is lightly coated.

Place the kale on a baking sheet covered with parchment paper and sprinkle with sea salt.

Bake at 350 for 10-15 until kale is crisp…and then enjoy!

Kale Chips are great as an afternoon snack, but they’re also the perfect easy summer side for dinner. I’ll definitely be making them this week! Alrighty, I’m off to try and get caught up on work/life…have a great day! Xoxo
