I’m feeling a little bit out of it this week. Cam and I had an amazing time in Carmel this weekend, however, we didn’t get home until after midnight on Sunday (California traffic, I’m giving you the side-eye…) and so yesterday I was really tired. And I’m still tired today. Traveling will do that to you I suppose. So while I have a million pictures to share with you from Carmel, as well as photos from various other happenings as of late, I only have a few minutes today. And that’s why I thought I’d share a fantastic summer recipe with you instead.
I am starting to get excited for fall and all the recipes that come with
it like hearty chili, delicious roasts, and dishes with apple, pumpkin,
butternut squash, etc…however, I want to continue to soak up summer
as long as I can! And to me that means ice cream, salads, berries and other fresh produce from the farmer’s market, and lots of dinners
from the grill! This meal definitely fits the bill as it’s a perfect dinner to enjoy out on the deck with a glass of wine.

Grilled Salmon with Avocado Salsa is a recipe that I came across on Pinterest (shocker) awhile ago that I’ve been dying to make all summer. We have salmon for dinner quite frequently, and so I’m always looking for new ways to make Cam complain about it less jazz it up. I’m also a huge fan of anything that includes avocados because they’re pretty much my favorite food. Seriously, I eat one pretty much every single day, they are so delicious. This recipe is fairly simple and the spiciness of the salsa with the creaminess of the avocado is the perfect compliment to the grilled salmon.
Ingredients (for 4 people):
2 lbs salmon, cut into 4 pieces
1 tbs olive oil
1 tsp salt
1 tsp ground coriander
1 tsp ground cumin
1 tsp paprika powder
1 tsp onion powder
1 tsp black pepper
Avocado salsa
1 avocado, peeled, seeded and sliced
1 small red onion, sliced
3 mild hot peppers, seeded and deveined, diced or
sliced
sliced
Juice from 2 limes
3 tbs olive oil
2 tbs finely chopped cilantro
Salt to taste
Preparation:
- Mix the salt, coriander, cumin, paprika, onion and black pepper
together, rub the salmon fillets with olive oil and this seasoning mix,
and refrigerate for at least 30 minutes. - Pre-heat the grill.
- Combine the avocado, onion, hot peppers, cilantro, lime juice, olive
oil and salt in a bowl and mix well, chill until ready to use. - Grill the salmon to desired doneness.
- Serve the salmon topped with the avocado salsa.
